Amazake is a fermented sweetener with a unique, sweet flavour and a medium-thick sauce structure. It is made from cooked rice or millet and koji. By mixing the large number of enzymes in the koji and the complex starch in the rice or millet and fermenting this for a few hours, the starch in the rice turns into easy to digest, natural sugars. So a natural, traditional Japanese sweetener is born!
