Agar agar (kanten flakes) is a traditional gelatine. It can be used to make savoury jelly, sweet jelly (kanten), custard, mousse or flans.

Another red algae, agar-agar is a processed sea vegetable product high in calcium, iodine and trace minerals, primarily used to make the Japanese dessert kanten.  Bars, flakes or powdered versions of agar-agar are dissolved in hot water and poured over cooked fruit or other ingredients.  This is then cooled and allowed to set forming kanten.
