Make your own pickled vegetables quickly. Pickling changes the food and some foods become more digestable. Pickling the cabbage for Sauerkraut causes the starch and sugars to be converted to lactic acid.

Mix chopped vegetables such as cabbage, cucumber, carrots, beetroot, ginger and onions with a little sea salt and place in the pickle press. Tightening the lid with the with the spring applies pressure to the vegetables. Make sure the press is at least half full.
